Here is another one of our favorites, best eaten on a warm summer evening 🙂 You can prepare it like posted or in many variations, for example using mozzarella cheese instead of sliced cheese or using a different Kind of bread / wrap; even using the avocado as spread! Your choice, all delicious!
Serves: 2. Preparation time: 15 minutes
- ciabatta bread or baguette
- lite mayonaise
- cheese, sliced – preferably Dutch cheese like Gouda or Cheddar
- 2 hard boiled eggs, sliced
- 1 ripe avocado
- 1 lime
- 10 cherry tomatoes, sliced
- baby spinach, washed, one small package
- garden cress
- salt and pepper to taste
Hard boil the eggs in salted water. Once boiled, peel and slice. Cut the ciabatta or baguette in two and slice down the middle. Spread lite mayo thinly on all 4 halves. Peel and slice avocado and sprinkle the slices with lime juice. Slice the cherry tomatoes. Start layering the sandwiches. Cover the bottom slices with baby spinach; then add a layer of egg, avocado, cherry tomatoes – after each layer add salt and pepper, freshly ground. Cut some garden cress to cover the tomatoes. Add slices of cheese. Finish layering with top halves of the bread. Finished!
